Equipment

  • 1 Popsicle mold
  • 1 Glass bowl
  • 1 Cookie sheet
  • 1 Silicone mat or wax paper
  • 1 Whisk

Ingredients

  • 2 cups plain non-fat Greek yogurt (You can use non-dairy.)
  • 2 cups sugar-free 70% or more dark chocolate chips
  • 2 tsp coconut oil
  • Optional: Chopped nuts

Instructions

  • Whisk together pudding powder and Greek yogurt until smooth.
  • Pour into popsicle mold and sprinkle a few chocolate chips then freeze.
  • Once fully frozen, melt chocolate chips and coconut oil together in a glass bowl. Put it in the microwave (or over double burner) for 2 min.
  • Allow to cool for five minutes.
