Ingredients
- 2 tbsp brown rice vinegar
- 2 tsp granulated stevia
- 1 tsp sea salt
- 1 cup cooked black rice (or use brown rice)
- 6 large sheets roasted or toasted nori
- 1 whole avocado (sliced)
- 2 tbsp sliced cucumber, radish, or microgreens
- 1 tbsp Homemade Furikake Rice Seasoning
- Optional: 2 teaspoons prepared wasabi
- Optional: coconut amino acids for drizzling
Instructions
- In a medium bowl, whisk together the vinegar, stevia, and sea salt. Add the cooked rice and stir gently. Let it sit to absorb the flavors.
- On a dry surface, make two stacks of three sheets of nori each. Using a knife or pizza cutter, slice each stack into eight equal squares (keep the nori dry so it stays crisp).
- Top each square with about 1 tablespoon of the seasoned rice and press gently. Add a slice or two of avocado, your chosen veggies, and a pinch of furikake. Drizzle with coconut amino acids and add a dab of wasabi for a spicy kick, if desired.
