Ingredients

  • 2 cups unsweetened almond milk (or your favorite non-dairy milk)
  • ½ tsp pure vanilla extract
  • 1 cup fresh or frozen blueberries
  • 2 tsp granulated stevia or monkfruit extract
  • 6 tbsp chia seeds
  • Topping: 1½ tablespoons unsweetened shredded coconut

Instructions

  • Mix almond milk, vanilla, blueberries, and sweetener until smooth and vibrant.
  • Add 1½ tablespoons chia seeds to each of four jars. Pour in ½ cup of the blueberry mix and stir or shake well.
  • Seal and refrigerate for at least 6 hours or overnight, until thick.
  • Sprinkle with shredded coconut before serving. Enjoy chilled!
