This Blueberry Vanilla Chia Seed Pudding is the ultimate grab-and-go morning treat—creamy, subtly sweet, and packed with antioxidants, fiber, and healthy fats to keep you full and fueled. Plus, blueberries and chia seeds? Total power couple.

Ingredients
- 2 cups unsweetened almond milk (or your favorite non-dairy milk)
- ½ tsp pure vanilla extract
- 1 cup fresh or frozen blueberries
- 2 tsp granulated stevia or monkfruit extract
- 6 tbsp chia seeds
- Topping: 1½ tablespoons unsweetened shredded coconut
Instructions
- Mix almond milk, vanilla, blueberries, and sweetener until smooth and vibrant.
- Add 1½ tablespoons chia seeds to each of four jars. Pour in ½ cup of the blueberry mix and stir or shake well.
- Seal and refrigerate for at least 6 hours or overnight, until thick.
- Sprinkle with shredded coconut before serving. Enjoy chilled!
