Coconut Cherry Sorbet

Ingredients
- 1½ cups fresh or frozen pitted sour tart cherries
- 4 cups unsweetened coconut milk yogurt
- 1 cup sour cherries, pitted (fresh or frozen) plus ½ cup for topping
- 1½ tsp pure vanilla extract
- ½ cup raw honey
Instructions
- Set aside ½ cup of the cherries for topping. Place the remaining 1 cup in a food processor with the coconut yogurt, vanilla, and honey. Pulse until smooth.
- Pour the mixture into a freezer-safe glass or plastic container, cover, and freeze for about 1 hour. Remove from the freezer, scoop and stir to break up any iciness, then top with the reserved ½ cup whole sour cherries. Return to the freezer.
- Let set for 3 to 4 hours, then scoop into bowls and savor each refreshing spoonful!
