For the Cake:– 2 1/3 cups all-purpose gluten-free flour
– 1 tsp baking powder
– 1/2 tsp baking soda
– 1/2 tsp salt
– 1 Tbsp orange zest
– 1/4 cup coconut oil, softened
– 1/4 cup unsalted butter, softened
– 1 cup monk fruit sweetener
– 2 large eggs, room temperature
– 3/4 cup plain Greek yogurt
– 1/2 cup orange juice
– 1/4 cup non-dairy milk (unsweetened almond recommended)
– 1/2 tsp almond extract
– 1/2 cup organic dried cranberries

For the Glaze:– 1 cup monk fruit powdered sugar
– 3 Tbsp orange juice

Instructions:

1. Preheat your oven to 350°F (175°C) and grease a bundt pan.

2. In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, and orange zest.

3. In a separate large bowl, beat the coconut oil, butter, and monk fruit sweetener until light and fluffy.

4. Add the eggs one at a time, beating well after each addition. Then mix in the Greek yogurt, orange juice, non-dairy milk, and almond extract until well combined.

5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the dried cranberries.
