Ingredients

  • 1 cup oat flour
  • 1 cup almond flour
  • ½ cup vanilla protein powder (plant-based is great for texture)
  • ½ cup full-fat Greek yogurt
  • ½ cup maple syrup
  • 1 cup mashed ripe bananas (about 3 medium bananas)
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp sea salt
  • Optional: ⅔ cup chocolate chips or chopped nuts for added flavor

Instructions

  • Preheat the oven to 350°F and line a loaf pan with parchment paper or non-stick spray.
  • In a large bowl, combine oat flour, almond flour, protein powder, baking soda, baking powder, and salt.
  • In a separate bowl, whisk together Greek yogurt, maple syrup, mashed bananas, eggs, and vanilla.
  • Combine the wet and dry ingredients until just mixed; fold in chocolate chips or nuts if desired.
  • Pour the batter into the pan and bake for 55–60 minutes, until a toothpick comes out clean.
