Combine yogurt, flour, and salt in a bowl. Stir until a soft dough forms. Too sticky? Sprinkle in more flour.
Split into 4, roll into balls, then flatten to about ¼-inch thick.
Heat a nonstick skillet with a drizzle of olive oil.
Cook each flatbread 2–3 minutes per side until golden and bubbly.
Brush with olive oil, sprinkle with herbs, or top with… basically anything!
