Ingredients

  • 1 cup Greek yogurt (full-fat or 2%)
  • 1 cup self-rising flour (No self-rising flour? No stress—use 1 cup all-purpose flour + 1 ½ tsp baking powder)
  • ¼ tsp salt
  • Olive oil or cooking spray for the pan

Instructions

  • Combine yogurt, flour, and salt in a bowl. Stir until a soft dough forms. Too sticky? Sprinkle in more flour.
  • Split into 4, roll into balls, then flatten to about ¼-inch thick.
  • Heat a nonstick skillet with a drizzle of olive oil.
  • Cook each flatbread 2–3 minutes per side until golden and bubbly.
  • Brush with olive oil, sprinkle with herbs, or top with… basically anything!
